All-chocolate shell cookies

In true Atok Wan fashion, the shell cookies will not be plain coloured but marbled like the Viennese whirl cookies below.

Look how put Mint Custard put the two coloured doughs in the same piping bag to create the marbled effect. This is how Atok Wan does it too. But just that the instructions in this recipe calls for the plain and coloured dough to be rolled together before putting it in the piping bag, perhaps to enhance the marbling effect.

Atok Wan’s Flower Shell recipe seems to have high flour to butter ratio but I guess it only means that the dough won’t that spread much then.

Bahan-bahan
1 merah telor
6 oz (170g) gula halus yang kisar sampai hancur (pakai icing sugar kalau nak senang)
7 oz  (200g) mentega sejuk
12 oz (340g) tepong gandum
1/2 chamcha kechil baking powder
1/2 chamcha kechil vanilla
2 sudu makan (1 oz) cocoa powder

Caranya ikut Tok Wan (cuma ditukar ejaan dan susunan perkataan supaya mudah difahami dan ditambah baking intructions):
1: Hancurkan gula halus (atau guna gula icing). Kemudian kacau bersama mentega sehingga kembang. Masukkan vanilla, kuning telur dan baking powder. Kemudian gaul ratakan.
2. Kemudian masukkan tepung dan gaul hingga sebati.
3. Asingkan 1/3 dan gaulkan dengan cocoa powder hingga sebati.
4. Ambil adunan yang plain, tepakkan kira-kira 5 jari lebarnya dan tepekkan menjadi 1/2 inchi tebal.
5. Ambil bahagian coklat dan letakkan diatas yang putih. Kemudian gulung dan masukkan kedalam acuan samperit, picit dan tolak ke atas. Check out the pictorial guide to piping a shell here.
5. Bakar dalam ketuhar 180 Celcius selama 10-12 minit. Lepas 5 minit, pusingkan loyang dari depan ke belakang supaya biskut masak dengan sekata.
