A lighter fruit cake that I quite like as a child. My sister prefers and only eat the darker, richer type of fruit cake–Kek Buah Gula Hangus or Burnt Sugar Christmas Cake with kismis (raisins and sultanas). I will post the recipe to Burnt Sugar Christmas some day but in the mean time do try the Genoa Fruit Cake.

Like my sister, I don’t quite fancy glacé cherries or other candied fruits (but not as bad as her, I still find them edible whereas she won’t even touch them) so most of the time, Atok Wan’s Genoa Fruit Cake will end up like this — a light fruitcake with just raisins and sultanas

Atok Wan’s cake has a lighter texture as she employs the foaming method (beating eggs with sugar first) as oppose to creaming method (beating butter with sugar and adding the eggs after).

Bahan-bahan
10 biji telor ayam (di asingkan putih dan kuning)
12 oz (340g) gula kasar
16 oz (452g) mentega
16 oz tepung gandum
10 oz (283.5g) badam (tanpa kulit dan dicincang kasar)
10 oz kismis (raisins and/or sultanas)
10 oz halwa kundur*
25 biji (5 oz atau 141g) buah cheri (dipotong empat)
3 oz halwa kulit limau (dicincang halus)
1 chamcha teh baking powder dan vanilla

*can be substituted with 1 packet of mixed dried fruit

Charanya:
1. Buah-buahan dan badam dijemur atau dikesat kering dan digaulkan bersama sedikit tepung (supaya tidak bergumpal atau sink to the bottom of the cake ketika dibakar).
2. Putih telor di-pukul sama gula sampai kembang.Kemudian masukkan kuning telor satu-satu. Pukul lagi hingga kembang.
3. Mentega dikacau dalam mangkuk yang lain.
4. Masukkan mentega dalam adunan telur dan gaul perlahan-lahan sampai rata.
5. Ayakkan tepung dan baking powder dan masukkan ke dalam adunan. Gaul sampai rata. 
6. Masukkan buah-buahan dan badam dan gaul sampai rata.
7. Tuang dalam loyang empat segi 9 inci. Masak dalam ketuhar 150 Celcius. Lepas sejam, tutup loyang dengan aluminium foil supaya kulit kek tidak menjadi hitam dan masak lagi dalam satu jam (total cooking time = 2 hours).
