Most (maybe all?) sugee cake recipes have almonds but Atok Wan’s doesn’t. So if you have a nut allergy, perhaps you could try the recipe below. The closest recipes to Atok Wan’s (that I can find online) are Rose’s Kitchen’s Almond Sugee Cake and Amida Dubai’s Orange Sugee Cake. I’ve added a few steps from Rose’s and Amida’s (like frying the semolina and soaking it overnight with butter) to add more oomph to the Sugee Cake.

I will give 2 measurements, one from the modified measurements in blue ink and the other, the original in pencil. In the modified version, Atok Wan increased the amount of all ingredients except sugar and condensed milk which means that the modified version should be less sweet than the original version. I still think there’s too much sugar though. If it were up to me, I would change the recipe to 2 tablespoons of condensed milk instead of 1/4 cup.

Bahan-bahan
(blue ink-modified)
10 oz (284g) gula pasir
15 telor ayam (15 kuning dan 5 putih) 
15 oz (425g) mentega
12 oz (340g) suji
5 oz (142g) tepung gandom
1 1/2 chamcha teh baking powder
1 1/2 chamcha teh vanilla
1/4 tin* (3.5 oz atau 100g) susu pekat
*1 tin susu pekat = 397g atau 14 oz

10 oz gula pasir
10 telur ayam (10 kuning dan 5 putih)
10 oz mentega
7 1/2 oz suji
2 1/2 oz tepung gandum
1 camca teh baking powder
1 camca teh vanilla
1/4 tin susu pekat

Caranya:
1. Goreng tepung suji tanpa minyak sampai naik bau dan warna bertukar keperangan (5-7 minit). Sejukkan dulu sebelum digaul besama mentega.
2. Mentega dan tepung suji dikacau bersama sampai kembang betul dan diperap bertutup selama 4-8 jam.
3. Keesokannya, dalam mangkuk yang lain, masukkan 5 biji putih telur, pukul dan masukkan gula sedikit demi sedikit sehingga kembang. Masukkan kuning telur satu per satu serta vanilla dan pukul hingga kembang.
4. Setelah kembang, masukkan adunan mentega. Gaul hingga rata.
5. Kemudian masukkan tepung gandum dan baking powder dan gaulkan.
6. Masukkan susu pekat dan gaul sampai rata.
6. Tuangkan ke dalam loyang 9 inci yang telah dilapik dengan greased parchment paper. Bakar di dalam ketuhar 150 Celcius selama sejam.
